    Today being Monday of course I cooked red beans. I put a couple of pounds on earlier today with smoked sausage, andouille and pickled pork.





    I also made some homemade yeast rolls which didn't come out like I usually make but they were still good.



    These were delicious!!!!!

    These really were amazing! In fact I just had a plate as leftovers for dinner.
    I haven't always added pickled pork but for now on I will always use it. I think the andouille and the smoked sausage and the pickled pork all together put them over the top.

    What do you guys put in your red beans? That question probably should be a separate thread but let's see what happens here.

    First I start with bacon grease to cook down the veggies in. Then ham and smoked sausage go in. On the side two ham hocks are being boiled in water to become tender. The water is then added to the meat and veggies and beans for cooking.

    My mom did it, and so I almost bullied my wife into trying it. Pickled pork. Once she made a batch with it, she was hooked too. You don't even need to brown it.

    I literally do not want to eat red beans without it. The sausage is nice but doesn't really matter to me.

    Ive never heard of pickled pork. Gonna try it soon

    Yall definitely piqued my interest with the pickled pork, typically everyone around here including myself use smoked ham hocks, tasso, smoked sausage for a pork flavor aid when cooking.
    Yesterday I did manage to find some pickled pork and proceeded to make the best pot of smothered cabbage in my life!

    It's a great addition anywhere you might normally use ham or bacon.
