Simmer for at least an hour, longer is fine. My wife cooks the pork as long as the beans, usually 4-5 hours. It's worth it. I think we buy Savoie's at Albertsons.
My mom did it, and so I almost bullied my wife into trying it. Pickled pork. Once she made a batch with it, she was hooked too. You don't even need to brown it.
