    Since yesterday I've been having an envie for homemade biscuits. I had to do something earlier this morning but I wasn't going to go past this morning without those biscuits. Got home and immediately started making biscuits.

    I decided to try a different recipe. These are a wet dough mixture. Biscuits made and waiting for the oven to come to temp.

    I could've settled for just the biscuits with butter and a jelly or preserve but I wanted more than that. Checked the fridge and no bacon. No problem, I'll just fry up some bologna.

    Leave it to you to make something as nasty as bologna look tasty. Would you mind sharing that biscuit recipe?

    Here you go.........
    I've tried many biscuit recipes in search of the best one and I haven't found it yet but this one is pretty darn good and not difficult.

    Buttermilk Biscuits
    Meredith Laurence

    Ingredients

    2-1/3 cups self-rising flour
    8 teaspoons (2 tablespoons + 2 teaspoons) sugar
    ½ cup butter (1 stick)
    1-1/3 cups buttermilk
    1 cup all-purpose flour, for shaping

    Instructions

    Preheat the oven to 425°F and arrange a shelf slightly below the center of the oven.
    Line a buttered 8” cake pan with parchment paper or a silicone liner.
    In a large mixing bowl, stir together the flour and sugar. Grate the butter into the flour and stir it in to coat evenly.
    Gently stir in the buttermilk. The dough should be quite wet.
    Spread the all-purpose (not self-rising) flour out on a small cookie sheet.
    With a spoon, scoop evenly sized balls of dough into the flour, making sure they don’t touch each other.
    With floured hands, coat each dough ball with flour and toss them gently from hand to hand to shake off any excess flour.
    Place each floured dough ball into the prepared pan, right up next to the other. This will help the biscuits rise up, rather than spreading out. You might need to do the above in batches.
    Place the cake pan on the arranged shelf in the oven. Bake until lightly browned, about 25 minutes.
    Brush the tops of the biscuits with some melted butter and pop back into the oven for another 5 minutes or so, until nicely browned.
    Turn the biscuits out onto a plate, and then invert them again so they are right side up. Pull or cut the biscuits apart and serve immediately with some butter and honey if you like.

    Biscuit Envie..... part II


    So, there were a couple of those biscuits left from yesterday morning and some fresh eggs sitting on the counter. I put the two biscuits in the oven to warm and cooked a couple of eggs over easy. The biscuits when warmed got some butter slathered on them and one was drizzled with some local Louisiana honey. The other was intended for dipping in the rich warm yolk.

    Aren't eggs cooking a beautiful thing?
