Alright, so what I decided to do this year was basically a Cajun Christmas dinner. I drove to Kartchner's in Krotz Springs LA and picked up some goodies not just the main things for the dinner. So yesterday I put a couple of stuffed whole boneless chickens in the Pit Boss. One was Spinach and cheese(I actually meant to grab a broccoli, rice and cheese but accidently got the spinach & cheese)and one stuffed with boudin.

One MUST remember to stay hydrated when grilling even when it's 32 degrees outside!

I missed getting a picture of them on the grill when they were done but I had added some links of pork boudin and Pepperjack cheese boudin to the grill.

Some of the boudin after it was done!

    The boudin stuffed chicken.

And the spinach cheese stuffed chicken.

Some of the sides were candied yams, green bean casserole, twice baked potatoes and shrimp mirliton dressing. Oh, and cheesy jalapeno sausage bread.

Here's my Rip tearing into one of his presents. Lol.....
