I came up with this with some input from my trainer.
Ingredients:
Sliced, precooked chicken (or steak, or fish, etc)
2 whole eggs, 1 egg white
1/4 Sm White Onion, Diced
1 Sm Yellow Bellpepper, Diced
2 tbsp extra virgin olive oil
2 slices Pepperjack cheese
1) Put olive oil in skillet and heat
2) Add in diced onions & pepper, cook until soft/brown
3) Add sliced meat, cook until meat is warm, add desired seasoning (salt, pepper, etc)
4) Remove above from skillet
5) Beat eggs, add to skillet, form circle
6) Add meat, onions, peppers to top of eggs, then place 1 slice cheese on top
7) Allow eggs to set then fold eggs & meat over
8) Allow to cook for 1-2 min, then flip, add other slice on top, cover and cook on low for 1-2 min
