Anyone got a good recipe for pickling banana peppers? I have a bunch on a plant that need to be picked, and I want to create something that tastes along the lines of what comes in the Papa John's pizza boxes. From what I've read, the basic ingredients are salt, vinegar, and garlic, but I sure would like to get some recommendations and personal experience if possible. Thanks!

I tried this along time ago when I grew them, jalapenos, and cayenne peppers. I never tried ANY seasonings; but remember that bringing the vinegar to boiling before pouring into the mason jars, makes some important difference in how they keep.

My buddy is an expert on flavoring his though; they are off the chart good. Perhaps tomorrow I will get him to tell me what he does, and pm you.

Thank Emperor, that would be great. I'd hate to put a good bit of effort into the canning process and end up with microbe eaten mush a couple of months from now!
