    Hi guys, I tried a very simple and tasty recipe yesterday, thought I'd share.

    Took a whole, cleaned, nice sized fox squirrel. Rubbed it with salt and pepper and stuffed the belly with fresh thyme and a couple of slices of lemon and some chopped garlic.

    Then I wrapped the whole critter in some thinly sliced pancetta and tied it all up with butcher's twine. Stuck the thing on a skewer and grilled it in the rotisserie for 45 minutes.

    It turned out delicious, try it!

    sounds great , I dont have a single fox squirrel around here.. they are much better than these greys.

    hey snookie, if you dont want to eat them, I can feed them to the hawk too..
