Inspired by N4Sir's many delicious looking threads, I decided to make my own. About a year ago I started a job where I work Mon-Friday, well last week my wife started a job with the same days and hours. That kinda messed up my "lifestyle" of having a home cooked meal almost daily. So now we have to meal prep. I feel like everyone does this to get healthy, but my meals are far from healthy.
First off, I started with some really nice angus beef short ribs, and 3 racks of St Louis style pork ribs. Very simple rub (coarse salt and pepper). And threw it in the smoker.
Take a look at that marbling.

I was using a mix of woods, mostly pecan and oak, but I threw a little hickory in also.
Made my own BBQ sauce. Ketchup based, but with a sweet, salty, spicy Asian flare.
One the ribs are pretty much cooked, I throw them on the grill to char them a little and get the sauce to "stick".
Back in the smoker it goes till I feel it's "done".
Short ribs came out perfect.
Taste just like brisket, super juicy.
Here's a pic of the "meal prep" Plan to pack some buns and maybe a little bbq sauce and eat it like a sandwhich.
Ribs with mashed potatoes (doesn't look creamy b/c my daughter is allergic to dairy) and broccoli b/c that's her favorite vegetable.
That's my meal for today and the next couple days. My wife also made some chicken marsala for when I get off of work tomorrow.
