A couple tips:
Bitter coffee? Add a small pinch of salt to the grounds.
Like variety? Add 1\2 tsp cinnamon to the grounds.
Flavor fan? Go Yankee and add maple syrup(or equivalent).
Don't like maple? Use molasses or brown sugar.
I always understood that the darker roast coffee had less caffeine. Does anyone agree OR disagree with that?

high temps break down caffeine. a slow dark roast can keep the caffeine.
too hot of a grind, too hot water, to hot of a roast break down caffeine, and when caffeine breaks down it leaves bitter alkalies.

Correct hence the importance of using water just below boiling. Too hot and it'll become bitter, too cold and you'll have poor extraction.
