I figured I would Penne' the pork medallions. Battered them with milk bath and dipped in flour and Italian bread crumbs. Got out the 9" pan with half butter half olive oil. The picture was taken while still cooking. I get the cheap pork loin on sale and cut it up into small medalltions. Put them up 3 to a bag. Fixed some simple yellow rice with onions garlic and cajun spices
