    Doing a boudin and bacon stuffed pork loin, 2 racks of ribs and some turkey wings on my UDS today

    Butterfly the loin.
    Season both sides generously with cajun / bbq rub
    Place a layer of boudin on the loin. I used Richard's Smoked variety
    Cook up 1 lb of bacon until almost done but still soft and place on top of boudin
    Roll back up and secure with tooth picks
    Place on smoker at 225-250 until internal temp is 160.
