    Normally, 1 cup grits, 4 cups water, salt and simmer for 20 minutes.
    Use real grits, not the instant or quick crap.

    Mine
    1 cup grits
    2 cups water
    2 cups heavy cream
    2 sticks butter (1/2#)
    1/2 # very crispy bacon broken down into very small crumbs
    1 tsp. salt

    Bring water, heavy cream, & butter to boil - wait for butter to melt.
    Whisk in grits
    Bring back to a boil
    Reduce to simmer
    Stir every 3-5 minutes
    When grits are done (20 minutes), add bacon bits and stir.
    Ready to eat

    Can also do shrimp & grits by pan frying 1 1/2# shrimp - season with a little Creole seasoning.

    This grits recipe is also great for grillades and grits (except I don't put the bacon for grillades recipe)

    This is so good you have to lay down to eat it - but has a tad of fat and calories.

    add garlic, a pureed onion,crystal hot sauce,grits rock.i am currently in richmond va.these clowns up here have no idea of what is good to eat. they laughed when i mentioned grits. then i made some.
