    I want to get some wood ducks this year. Wrap them in bacon and cook on the grill. Never tried them that way but I'm will to take the risk. ;)

    Let me address this. The celery and onions is just for flavor. However I like to eat that stuff after the duck is gone too. I stab the pieces with my fork. It's like eating Chunky soup after you've eaten the main course.

    Yep! Very hard to shoot ducks when every hour of sunrise outside of work is in a deer stand. :p

    BTW, I killed all kinds of crap this weekend. :draw:



    You did better than me. Hunted the entire weekend, and all I saw was a lowly spike- where you have to shoot 8pts or better, or have 14" inside min.



    ....but it was still fun!

    Well let me adress this comment. It certainly depends on what you had. I will admit that I put this together hastily. And, I have had some decent meals at Picadilly; but that was many moons ago. I cannot speak to the current state of Picadilly fare.

    I've never had duck. I hear it is a real dense meat and kinda greasy...

    But then I never had Venison until a couple years ago either.

    Don't know if this is a question or a comment, but here goes;

    There is a big difference between wild ducks and farmed ducks. Wild ducks have far less fat, hence they can dry out rapidly. The fine line between perfect and done is rare verses overcooked. Most people that enjoy wild duck seem to overcook them. Erroneously believing that the "Wild" needs to be cooked out of them. A perfectly cooked duck, (like the ones I enjoyed for my lunch), are just near rare. When you go past that, you enter the realm of tough.

    To pass that threshold, you must continue to cook until stewed tenderness is achieved. And it's only greasy if you add too much butter or fat to your recipe.

    I see this is a comment that can easily be converted into a question with the addition of a question mark.

    Generally I will cull the shovelers or "Texas Mallards" as we also like to call them, to someone that I am sharing ducks with who I am confident is less of a duck gourmand than myself. Nothing wrong with a shoveler, but next to a gray, widgeon, pintail, or green head; they like Texans to Louisianans, pale in comparison. :p

    Question: How difficult was the duck to cut using the plastic utensils at your disposal?
    Comment:The prongs don't look too bent out of shape, must have been tender.

    Interestingly enough, I sell "Duck Fries" along with other treats. I will leave that up to your imagination. I am not a big fan of eating the testes of any animal or mammal; but thanks for your comment.
