Monkey Gland Steak – Makes 8 servings
Cube meat (aka ‘monkey meat’) – 1 per serving
1 large onion, diced
1/2 cup of water
2 large tomatoes, diced
1 cup of ketchup
1/2 cup of Worcestershire sauce
2 cloves of garlic, finely chopped
3/4 to 1 cup of fruit chutney
1/2 cup of brown sugar
2 tablespoons of vinegar
1 teaspoon Tabasco sauce
1. In a frying pan (skillet), heat the oil and sauté the onions and garlic until it is soft.
2. Add the remaining ingredients, mix well, and let it simmer for 30 minutes.
3. Fry or grill the Monkey separately to your liking.
4. When the sauce is ready, spoon the sauce over the monkey steaks.
It is usually served with rice.
