My in-laws are coming over for a late lunch after church today. I picked up a 17lb prime brisket from Sam’s last weekend. I put it on my PitBoss yesterday about 8pm.

Just before that I had about 2 lbs of pork loin that I cut into thin strips to make a stir fry over rice. I was a little heavy handed with the ginger in my sauce but it turned out to make a pretty darn good bowl.

Hopefully I don’t screw up the brisket here on the home stretch!

    To be continued…

A pellet smoker may not be as traditional as a stick burner but it certainly takes away a lot of the babysitting.
I’ve got a Boston butt out but don’t have time to babysit the smoker so in the oven it goes for some pulled pork for dinner tonight.
