Shrimp and Spinach Pasta

    This is a variation of a seafood lasagna recipe that I came up with. Its WAY easier and quicker than lasagna.

    1 LB medium-large shrimp, peeled and deveined
    1/2 LB Fresh Spinach, chopped
    1 cup sliced mushrooms, Optional
    1/2 stick salted butter
    4 tablespoons flour
    1 pint of half&half (i actually use heavy whipping cream)
    2 pods miced garlic
    1/4 minced chives
    2 tablespoons white wine
    1 bag shredded parmesian cheese (i use the ones that have parmesian, romano and asiago mixed together)
    old bay seasoning
    pasta (i use angel hair since that's the only pasta i like)

    melt butter in a large pan, add flour, cook on medium low heat for 5 min stirring constantly.
    add garlic and chives and cook down for a couple minutes, still stirring constantly.
    add shrimp, spinach, mushrooms and old bay seasoning and sautee until shrimp are fully cooked.
    add cream and wine and let it come to a slow boil, stirring so the cream doesn't currdle.
    slowly add cheese to desired thickness.
    serve over pasta with a big piece of garlic bread.
    you can add/substitute crab or crawfish or even chicken.
    this takes about 30 minutes total to prep and cook.

    next time i cook this i'll try to remember to take some pics.
