    The wife made some chicken, sausage, & shrimp gumbo.

    Now comes the chili, & yes with beans for dinner.

    It was a way of adding protein to something when meat wasn’t plentiful.
    I think you right. Im 60 and just moved back to abbeville after 50 years. As a child i clearly remember eggs in chicken and sausage gumbo. Try it you will like it.
    My family were cajun, Dads second language was french and his mom spoke french only. Also back then spice was added at the dinner table not coocked into the food with Slap your momma.
