Who is preparing their gumbo early for this cold snap ?

Working on mine this afternoon should be prime form Monday evening onward.

Browning down all my chicken and have another pot rolling making a stock with all of the skin, carcass, and trimmings.

The rest of the fixings including 3 lbs of Juneau’s smoked pork sausage and a chunk of tasso.

I resisted for years . Somebody served me a bowl of gumbo with a big scoop of potato salad in it . It was a game changer . Try it once .

My comment didn't mean I was putting my potato salad in my gumbo last night but I have done it. It's good! You don't have to put it IN you gumbo. You can have it separate on the side, get a half spoon of potato salad and dip in and scoop up some gumbo. Try it! I have seen and thought it was crazy that someone put a big scoop of potato salad in their bowl of gumbo and stirred it up. That was nasty looking! When I do do it I put a scoop of potato salad(in tact)in the bowl of gumbo to the side and eat a bit of the salad with gumbo. Mixing it up is not how you do it.
