Ha Ha oh hell I read into that wrong, my in-laws are from Abbieville and Erath which were the first places I’ve seen it. Seems it’s more prevalent south of I 10.Location such as City, Area ETC.

That looks pretty good, one can almost lick the screen for a taste?Cooked a pot of chicken & sausage yesterday. Served it with rice and whiskey on the rocks!
I make my own broth as well by throwing the carcass of a chicken, bunch of scraps, and some seasoning in the InstaPot for 3 hours on high heat at pressure.

No potato salad in the bowl for me. I like my potato salad cold, and made a day or two before we eat it. And no mustard or celery in my potato salad.Much to my in-laws chagrin I can’t get down with putting potato salad in my bowl of gumbo. On the side, we are good. In the bowl, hard pass.
Leftover is better than "day of" gumbo. We like to let it sit in the fridge a day or two after we make it. It seems to pick up much more flavor.It was delicious! We've got another day or two of leftovers!
